No one says it quite like the king himself, Anthony Bourdain: "Good food is very often, even most often, simple food."

Over-complicating recipes or stripping ingredients of their raw flavor is something I see time and again, which in turn makes me think about this quote often when I am dreaming up a recipe. I also see the essence of it weaving through my favorite food-focused movie, Chef. These particular words resonate particularly with a scene from this John Favreau film. After being fired, his character returns home and finally prepares the menu he'd dreamed of making for a a**hole food critic. The scene unfolds as the ultimate food porn—I had never seen anything like it when the movie premiered over a decade ago. While the preparation of every dish is a feast for the eyes, the one that captured my heart is the dessert: strawberries and cream.

Admittedly, I have watched this scene in ‘Chef’ over a hundred times. First, out of memization of the beauty and simplicity, and second, to learn how to create my own version - specifically the dust.

It is a powerful reminder that incredible culinary experiences aren't always found on a Michelin-starred menu; they often come from moments of honest, heartfelt cooking. Not hiding real food and ingredients under a heavy sauce.

While in the film the berries are macerated (berries that have been left to sit with sugar, to release their natural juices, become soft, and develop an intense, sweet, and almost saucy flavor), I wanted to pair it down even more and let the fresh sweetness of the strawberries shine and serve the cream on the side as a dipping rather than a covering. Plus, there is a show-stopping element and plain old fun when you serve this for a crowd; the strawberries really do all the work for you.

Before it turns to dust, the caramalized harded sugar looks like stained glass.

This humble combination—two ingredients, effortlessly brought together—is a pure expression of summer. It’s not just a dish; it’s a feeling. There’s something so unapologetically delicious about a bowl of vibrant strawberries, their raw sweetness paired with a cloud of freshly whipped cream. The cream's richness balances the fruit's natural acidity, creating a simple harmony that feels both familiar and special.

Basically fairy dust

This dish is the epitome of pure flavors and illustrates the joy found in simplicity and in celebrating what is inherently good. It is the taste of a farmers market visit, the quiet pleasure of a warm afternoon, and the kind of spontaneous creation that requires no recipe, just intuition. This dish isn't about impressing anyone; it's about pure, unadulterated enjoyment and a whole-heartedly love of food. It is a culinary hug, a small indulgence that brings a moment of simple happiness.
